Sobrasada with Fried Duck Egg

This sobrasada with fried duck egg is the perfect way to start your morning, filled with vitamins, proteins, and a delicious flavor profile that will keep you smiling all throughout the day!

Ingredients

  • 2 duck eggs
  • 100g sobrasada sausage, cut into one-inch thick slices
  • 2 chunky slices of sourdough bread or other country bread
  • Unsalted butter
  • 2 tbsp of olive oil
  • A pinch of fresh thyme leaves
  • Salt and pepper

How to prepare

  1. Get a medium-sized frying pan, add 1 tablespoon of olive oil and place the sobrasada in 1-inch pieces.
  2. Using a utensil such as a fork, push down on the sobrasada to help break it down into a mince and fry it for 3 minutes or until a little crispy and set aside.
  3. In a second frying pan heat olive oil until it begins to get smoky, once it starts to get smoky, break the duck eggs into it and fry them until they are lightly brown, and the egg yolk are still runny; this is about 2-minutes.
